1940s - 1960s recording

Hi,
I am a newbie to this forum.
Some 1950s recordings that have been remastered to CD seem to have much noise.  Is it true that 1940s and 1950s recordings sound mono even when remastered to CD? I have a HMV Arthur Rubinstein playing Chopin's works CD and there is a lot of noise and the recordings of the piano don't sound rich. Is it the same as other 1950s recordings? Or is it that the recording company's technology is not adequate?
How about 1960s and beyond CDs? Do they sound much more stereo and live?
