With seventh chords I generally use all the fingers -- in the left hand, 54321,4321, 4321 etc. If possible I try to avoid putting the thumb on a black key, but I don't obsess about it. Is there a particular arpeggio you want to ask about?

Minor major chords (CmΔ7) and augmented major chords (AbΔ+5). Mostly triads of major thirds + one minor third. I made a scheme for it in finale (https://www.finalemusic.com/showcase/uploads/FS33591.mus). But I think you´re right about the obsession part heh.
