I don't know if the "composers" of these popular hits ever credited/acknowledge their "real composers".
"All by Myself" - from in Rach2 Piano Concerto (Op.18) 2nd mov't
"A Groovy Kind of Love" - from Clementi Sonatina in G, 3rd mov't (Op. 36/2)
(a Barry Manilow song...I forgot) - with full intro exactly as Chopin's C minor prelude (Op. 28/20)
"No Other Love" - from Chopin Etude in E (Op.10/3)
"To Love Again" - from Chopin Nocturne in Eb (op.9/2)
Can you add some more...?

Oh yes that Celine Dion song really pisses me off, my annoying sister had a CD of it once and i looked in the CD inlay to see if whoever had written the song (presumably not Celine) had credited Rachmaninov because it is such a blatant rip off...but no, of course they hadn't.
The British rock band Muse (one of my favourites) have a habit of ripping off Rachmaninov too. On their 2nd album (Origin of Symmetry) i think it is Space Dementia - with the big piano opening - sounds to me exactly like the opening of the Rach 2. Plus in their most recent album (Absolution) in "Butterflies and Hurricanes" (track 10 i think) there is a little bit in the middle of the song, which is just like the Rach 2 concerto again. They even have solo piano and strings - like a proper orchestral sound. Matt Bellamy (the singer) always goes on about how much he loves Rachmaninov though (he plays piano and guitar and sings lead vocals) so the Rach "influence" is not surprising.
Although it annoyed me a little bit when i went to a Muse gig a couple of years ago and was talking to some fans in the queue and they were going on about how amazing and original Matt Bellamy's piano playing was...i just said "er...go and listen to Rachmaninov 2nd piano concerto and you will see he isn't all that original..." and they were like "oh who's that?" ::)
Also I'm sure there is a famous song influenced by Bach's Air on a G string (purple somethin??)- but aren't a million other songs influenced too? (Including another Celine Dion one i think!)

I was once in a grocery store, they had music playing and after a while I realised it was some pop rendition of the 3rd movement from Rachmaninoff 2nd symphony. Anyone know what that song was?

Perhaps it was "All By Myself" by Phil Carmen?
