I'm mostly self taught, and just can't seem to find another work to pursue. So far under my belt I have Moonlight Sonata first movement, and Chopin's E minor prelude. I also worked on his C sharp minor waltz for a while, and after getting to the piu mosso bit of the piece I decided that while I could manage it with time, I didn't really have technique enough for it and would be better off going after something easier (in this case, E minor prelude, though to be honest I probably should have gone with something a touch harder than that).
Now that I've finished, I'm just struggling to find something more or less in between what I've already accomplished and the aforementioned waltz. I understand it's probably not that simple due to the pretty large difficulty gap between the pieces, but even still... You guys have anything that comes to mind?

I think what you need is a music book of popular classical pieces for the intermediate pianist ... there's quite a few out there, you could do a google search and/or browse amazon. Some pieces to consider:
Fur Elise by Beethoven
Fantasy in d minor by Mozart
Nocturne Op 55 no 1 in f minor by Chopin

Lots of options, this is basically all of the upper intermediate piano rep. Give the Schubert Six Moments Musicaux a look and tell me what you think.

i think you can try to learn mozart sonatas or clementi op 36 sonatas are great to develop your musical abilities

Seconded, great suggestion! A book like this would give you many options with lovely pieces that aren't too hard and might help you grow.
