How about decent theory workbook recommendations?

I'm also looking for a theory book that is useful for teaching large classes of students.  It has to be very simple.

How about fingered 2 octave scales in major and minor?
Does anyone have a file with the fingering in already?
Everytime I try putting fingering in - my software program gives me a hard time.
