I've been experimenting with a wonderful piece of open source software called jOrgan. It essentially lets you build your own virtual organ that pretty much operates like the real thing. You can use any MIDI device as manuals to play it.
It's a lot more than just using the "organ" patch on your keyboard, because it lets you register your stops. There are some great free soundfonts you can use with it.
