mozarella sticks

you know those really good appetizers at various restaurants.  well, i haven't gone to the site 'unclephaedrus' yet - but, i want to try to make some homemade version of them.  i have the mozarella cheese - but wondering about the batter.  has anyone made them?  the frozen ones can get expensive- and there's not that many in the box.  my son eats them like they are going out of style so i want to surprise him.  any recipies?

Cheese Sticks

1 1/2 cups Italian style dried bread crumbs
1 tsp salt
2 (16 oz ) blocks pasteurized mozzarella cut into 4 x 1 1/2 inch sticks
4 large eggs beaten to blend
1 1/2 cups veg oil
Stir bread crumbs, 1 cup parmesan and 1 tsp salt to blend.  Dip cheese in the eggs
to coat completely and allow excess egg to drip back into bowl.  Coat cheese in bread crumb mix.  pat well so crumbs adhere well.
Place cheese sticks on baking sheet.  Repeat dipping cheese sticks in egg and to coat a 2nd time.  Cover and freeze about 2 hours and up to 2 days.
Heat oil to med in large frying pan.  Working in batches, fry cheese untill golden brown about 1 minute per side. 
Transfer to plates and sprinkle with remaining cheese and serve with Marinara sauce

INGREDIENTS:
1 quart oil for deep frying
2 slices Italian bread
1 slice mozzarella cheese, 1/4 inch thick
2 eggs, beaten
1 tablespoon grated Parmesan cheese
1/3 cup dry bread crumbs

DIRECTIONS:
Heat oil in deep-fryer to 375 degrees F (190 degrees C).
Sandwich the mozzarella cheese between Italian bread slices.
In a small bowl, mix the Parmesan cheese into the eggs.
Place the bread crumbs in a small bowl.
Dip both sides of the sandwich into the egg mixture, then into the bread crumbs, coating thoroughly.
Carefully place the coated sandwich into deep fryer. Cook 2 to 4 minutes, or until bread is golden brown and cheese has melted. Remove from oil, drain on paper towels and cut into 4 triangles to serve.

INGREDIENTS:
1 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
3/4 teaspoon salt
1 pinch ground white pepper
1 cup beer
4 cups safflower oil
1 egg white
1 pound mozzarella cheese sticks

DIRECTIONS:
In a medium bowl, mix together flour, baking powder, baking soda, salt and white pepper. Gradually pour in beer. Whisk briskly. Cover and allow the mixture to stand 90 minutes.
In a large, deep skillet, heat safflower oil to 375 degrees F (190 degrees C).
Whip the egg white into the batter. Dip mozzarella cheese sticks into the batter.
With a slotted metal spoon, place coated cheese sticks a few at a time into the hot oil. Fry 2 1/2 to 3 minutes, until crisp and golden brown. Drain on paper towels and serve hot.

Mozzarella Sticks
1 pound mozzarella sticks (string cheese) or brick mozzarella
2 eggs, beaten
1/4 cup water
1 1/2 cups Italian bread crumbs
1/2 teaspoon garlic salt
1 teaspoon Italian seasoning
2/3 cup flour
1/3 cup cornstarch
Vegetable oil (for deep frying)

If using brick-form mozzarella, cut the cheese into finger-size sticks.

Beat the eggs with water and set aside.

Mix bread crumbs, garlic salt and Italian seasoning and set aside.

Blend flour with cornstarch and set aside.

Heat vegetable oil to 360 degrees F.

Dip cheese in flour, then in egg wash and then coat with bread crumbs. Place carefully in hot oil and fry until golden. This takes just a few seconds so watch carefully. When golden, remove from hot oil and drain.

Serve with favorite spaghetti sauce.

This is what i do

1. get on the bus
2. go into town
3. head for tesco's
4. buy cheese sticks
5. go home
6. eat them

thank you all SO much.  we're going broke buying them.  thalbergmad, i'll let you know which recipie turns out the best.  doesn't look that hard! (until the cheese melts all over).  ::)

What would they taste like in chip shop batter?  you could flavour them as well. I might try :)
