How do I know hte piece is original piece?

For example, Fur Elise got alot of pieces,they claim that is original piece,but they got many versions...so how should I know which of them is real original piece?

By talking to many, many leading authorities on Beethoven, and also trying to find the original manuscript, if there is one. If there is, it was most likely part of the big bunch of music that was donated to Juilliard.

Look for scores marked "Urtext"; they are believed to be the most accurate.

Don't simply look for the term Urtext.  If you find an edition labeled as such, read the introduction and critical notes to determine the sources used in the preparation of the edition. If you live near a university with a music program, the librarian(s) can be VERY helpful in matters like this.
