screamin' greens casserole

ok.  i got creative tonight and made a casserole with the start of an idea from a soul food recipie - but added a lot of my own stuff.  here it is:   (if it turns out good, i'll let you know)

the first part is simply cooking the screamin' greens:

5 lbs collard greens
1 medium onion (i used 1/2)
1/4 veg. oil (i used butter)
2 jalapenos (i used one habanero)
1 smoked turkey leg (i used plain turkey and smoked cheese)
seasoned salt and pepper (i used soy sauce)

ok.  you boil the water.  put in the butter.  chop the greens and put them in.  stick in the chopped habanero.  and finally lay the turkey leg and assorted bits of turkey.  bring to a boil on high.  bury the turky wing.  cover and reduce heat to medium low.  cook for 10-15 minutes (or more).  remove the turkey - chop -reinstitute.

here's my addition for the casserole:

smoked gouda cheese
american cheese

put in cuisinart and medium grate

take out and put into a bowl.  then, put 1 container of sour cream and 7 eggs into the b owl with some soy sauce generously sprinkled.

cook some egg noodles.

mix the 'screamin' greens' with the cheese.  as soon as the noodles are cooked - add them.  then pour the whole thing into a casserole pan and pour the sour cream mixture over the top.  bake at 350 for 1/2 hr. 

(i forgot to say - drain the greens before doing anything with them)

wise choice adding noodles, but not so sure about the sour cream/egg topping, it seems that the topping will be fluffy and I don't see that going well with your more dense filling, perhaps a more crunchy topping would accompany the savory filling. such as:

typical french fried onions

one cup bread crumbs tossed with 1/4 cup of butter (before baking)

crisp bacon, mixed with any of the first 2 toppings

1/2 stack or ritz or ritz-like crackers finely crumbled with 1 tbsp of butter melted



but it does seem as if your casserole creation already exists:

Green Noodle Chicken Casserole

2 cups chopped cooked chicken or 1 chicken,
    cooked with celery, onion, salt and pepper
2 1/2 pounds collard greens
1 cup chopped celery
1 cup chopped onions
1/2 cup (1 stick) butter
1 jalapeno chopped finely
1 (6 ounce) jar pimento or 1 (6 ounce) jar Spanish olives
12 ounces green noodles
2 cups stock (or 1 cup stock plus two cans celery soup) 
1 green bell pepper, chopped
2 cans cream of mushroom soup
1/2 pound Velveeta cheese

If using whole chicken, boil to cook, then remove chicken from pan and save stock. Cool chicken, remove skin, de-bone and cut into bite-size pieces.

Cook collard greens in boiling water about 15-20 minutes. strain.

Sauté in butter the celery, onion and bell pepper. Add mushroom soup, pimentos, jalapeno, cheese and 2 cups stock.

Cook green noodles in reserved stock until tender. In greased casserole, place layers of noodles, then chicken and greens, then sauce, alternately until all are used. Cook covered in 350 degree F oven until heated through and bubbly. Cook covered until just before removing from oven.

Serves 16.

hmm.  that one gets bubbly.  mine didn't.  so it's a different recipie.  but, i like it anyway.  lau.  thanks for the input about crunchy tops. 

ps  i hate microwaved food.  almost as much as thal hates schumann's piano concerto.  the thing is - piano concertos don't just suddenly lose all flavor.  they either have it or they don't.  but, with microwaves - there is no flavor produced from the slow cooking process. the kind that wafts into the air and lingers.  you get a full minute of an identity smell - and from there on you have to guess what you just cooked (if you were blind).  it cools off almost as fast as it was cooked.  sometimes the center is still frozen and you have to pretend again from square one that you are not hungry and can wait 3 minutes.

it gets bubbly? you tried that recipe i just gave you?

p.s: When dealing with microwave food I usually flip them over halfway through cooking time for even heating, and also but a couple napkins under the food to absord moisture and avoid soggyness

Place in bowl:  tablespoon mini-marshmallows, tablespoon semi-sweet chocolate chips.

Microwave 30 seconds or until marshmallows start to swell.

Mix but not very well - just a quick circle with a knife.  You don't want them to get creamy and homogenous, you want the chocolate and marshmallow to be mixed but distinct.

Spread on graham cracker. 

This is the correct way to make smores.  All other methods are inferior.

never thought about smore's.  ok.  they're allowed.   ;D

say, my casserole turned out pretty good.  i used 'old Bay' seasoning on the turkey (i forgot to say).  anyway, it has this hot/spicy yummy taste to me.  but, unfortunately after a day's work cooking it - my kids won't eat it.  preferring isntead (of greens) to eat subway :'(  we used to have to eat everything on our plate.  they refuse to even try it sometimes.
