I'm in form listening to Rach - Elegy and someone goes "OMG that sucks I could play that". My face dropped, I looked like i'd just been slapped with a Baracuda.

I dont agree with Sborovic, it has nothing to do with disrespect for the composer, its about playing music that you like, earning a couple of bucks, educating the 'rowdies' and more important: Getting stage experience.
Playing in Grand Cafe's is to my opinion the first step for getting used to crowds that listening to you, and getting rid of that fright.

Btw, Chopin himself used to play alot in saloons, i bet not everybody was quiet there either.
