Difference in form beetwen classical symphony and classical "piano" sonatas?

Generally the symphonies (of haydn and mozart) have 4 movements but it seems the sonatas has three movements and that the minuett movement is often left out. Is this correct? If it is or if itīs not, does anyone know a source where that I can quote or read up on it?
