Performing a long piece

What would you recommend for performing a long piece? For instance, when I perform a piece, I always seem to look at it as a whole, and all of a sudden it looks so long, and how can I play everything extremely well?
Well, sonatas, I break down into the Exp., Dev., and Recap, but what about other long pieces?

When playing long pieces I would hope that you would aim to see it not as one large piece but rather parts. I don't think that you would have to go so far as to seperate it with theory, rather section it up as the music changes in sound. Use your ears, anyone can do this, it doesn't require a lot of knowledge.
When does it change, what is the sound effect that the change tries to creates. Long pieces then become a string of shorter pieces played after one another. You would of course practice all these sound groups seperately and ensure that each one can be played alone without relying on the other to cue where the hands have to go.
