Studio recordings in XXI century

Hi,
I know that, using nowadays technologies, studio recordings are "fake", in some way. For only piano pieces, technicians just cut and paste parts of different takes, creating a perfect version that was probably never played altogether.
I wonder what does happen with orchestra...Are all group of instruments recorded playing at the same time or, as most pop bands really do, each group of instruments is recorded separatelly?
For instance, you can have the violins play alone, and then the wind instruments play alone (while listening to the violins)...Finally, all is added. Is this a common practice in classical music studio recordings?

I have not seen instruments being recorded separately, not even for film music, but I don't want to exclude anything nowadays. Otherwise, orchestral pieces are just as much spliced together as anything else.
