Its the middle pedal on a grand piano, and legato pedaling without bluring allowing only the keys depressed before the pedal is engaged to be susstained/But you have to depress the pedal after you play the notes/chords which you want sustained :)

Greetings.

Sustaining notes while playing other notes. For example holding down C and E while playing F and G whether legato, staccato, etc. This is also sustaining notes without the pedal, using the pedal to enhance the music.

Correct me if I misunderstood you, but sostenuto as a tempo might sound as a calm, not too slow not too fast. The notes should be longer, flowing, but still be non-legato or legato if that is what's written in the music. The sustained notes can be sustained whether with a pedal or not and the other notes can be played as they need to be played, whether fast, slow, etc. I hope that this answered your question.  :)
