Greetings.

I am curious about the Microcosmos, as I have heard some of the pieces, but never actually played them so far. What technique do they stress, what level?

i don't think it's mikrokosmos VS. czerny, but rather mikrokosmos AND czerny - at least that's what i do as a teacher.

and i don't use hanon, i prefer making up exercises for each student (if i feel they need to work extra on some particular technical problem).

I reckon microkosmos is better than the other 2. Mikrokosmos is like album for the children in my opinion.

I love some of the Mikrokosmos, such as free variations, despite being very dissonant. I like how that Mikorkosmos increases in difficulty with each book, I think.

Well, yes. I've only tried Hanon but it seems alright. Others say it is a waste of time and better of doing Scarlatti, devising your own exercises, etc.
