That's a hard decision. Right now, I would say Chopin's Ballade No.1, as it is on my list to learn.

These days J.Strauss jr.-Cziffra An der schönen, blauen Donau, Op. 314. Breathtaking and stunning performance by Cziffra with some many crazy-technical things and beautifull colors...

Franz Liszt: Sonata in B minor. I have at least 20 recordings of it. My life would not be the same without it.

Ravel's Ondine and Barque sur l'Ocean are recent faves. Pogorelich's Ondine is mind-blowing.
