Simple Collections for Beginners

I teach two piano classes in a public high school and am currently using Bastien's Piano for the Older Beginner. Each class usually has about 20 students so the level of abilities is wide. Could somebody recommed a few composer/genre collections that would be helpful supplements to my curriculum? Are there any collections that include history?
