belgian waffle recipies

banana sour cream waffles:

1 C flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 egg (separated)
1 C sour cream
1/4 C milk
1/4 cup butter
1 ripe banana

in a large bowl, whisk together flour, bp, bs, and salt; set aside.  in a small bowl, beat the egg white with a whisk until it peaks.  add egg yolk, sour cream, milk, butter, and banana to the flour mixture and mix well.  fold in teh whipped egg white.  pour 2/3 to 3/4 C of batter into waffle iron.

crispy ginger ale waffles:

2 C baking mix
2 T oil
1 1/2 C ginger ale

whisk together baking mix, oil, and ginger ale.  let sit five minutes.  pour 3/4 C into waffle iron.

Belgians waffle far more than the French do - as any French person will tell you given less than half the chance.

But never mind that - come on, Thal, do show abit of appreciation for Susan's generosity in sharing her seemingly uneneding supply of recipes - I mean, let's face it, these surely beat Marc-André Chapter Deux Verse Onze any old day, wouldn't you say? (sorry, Susan)...

Put on the cheese and until it melts, or smoke starts to pour off it.

Lightly toast 4 slices of bread, and spread on 3 kilos of Flora.

Insert said cheeseburgers between the bread and pour on 2 bottles of HP sauce.

Fill up a large flower vase with 2 litres of Stella Artois and enjoy.

(Alternativo II) ...make a nicely reduced sauce of vegemite and liquid imodium and...

Thal, mon cher, I have to say that, given the choice of dining with you or dining with Susan, I'd choose the latter; the prospect of living another day other than in hospitalised intensive care is not entirely unattractive...

Do keep working at it, though - "practice makes perfect", "per ardua ad astra" and all that - you might just make a place on Masterchef yet (even if only as the floor cleaner or restaurant pianist)...

hospitalized intensive care?  what did you do?  visit thal first anyways?  what's going on mr. alistair?  or are you helping your friend with the hip problem?

first hand from me - too.  a day of hospital food is enough.

now - cheeseburgers with good company sounds ok to me.  but, thal forgot the french fries.  those thick spicy ones.

oh.  sorry.  'chips.'  i started thinking about that today (yes.  i'm slow)  i was thinking -'i wonder if british people even know what french fries are?'

sorry to get off topic - but i watched a pbs documentary last weekend at around 2 am when i was having a hard time sleeping for some reason.  and, found out poor mr john adams who wanted to get some french intervention (money) for the war effort and sailed in mid-nov or december - only to find out by the time he got to french shores that benjamin franklin had already been there/done that.  but, his wife gets to come to france and they have a nice time there.  makes me think more about belgian waffles again.  my point?  well, i think that the british and the americans just can't outdo the french. 

with valentines coming up - what i want is breakfast in bed.  belgian waffles.  topped with pennsylvania whipped cream (which btw, is the best in the world) and strawberries.

ps thal, did you change your mind about spending $500. on the boss.  i mean you break down the 'prizes' and save something for yourself before it's too late.  kind of like a valentines present to yourself.  maybe the belgian chocolates?  terrible of me, i know.  well, anyways - i think you must be nicer than you let on to spend all that on the boss.

and - alistair - i'm so glad you haven't got anything incurable.  i was really worried there about you - and being intensively cared for.  the only person i really liked at the hospital was the anesthesiolgist.  he actually came to my bedside and chatted for a while.  i'm sure he didn't have to.  he could have sent a nurse with the paperwork.  but, he came and assured me that he knew what he was doing and would be handling my case.  i think people like this in hospitals make the world a better place.  shoot.  i should go back to the hospital and do something for these people that helped me when i was injured.

Im I Love WAFFLES There used to be a fantastic place you could get them on a street stand in Brussels where they were so sweet and sugary you could feel your teeth rot as you bit into them - gorgeous!

If I wasnt a pianist/teacher Id either be a cruise critic or own a very exclusive CAKE shop (icture florians - palm court orchestra and all!)

here is a little different version of your banana sour cream waffle if you want

Banana Sour Cream Waffles recipe

1 cup all-purpose flour
1 1/2 teaspoons granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg, separated (beat egg white until stiff)
1 cup sour cream
1/4 cup milk
1/4 cup butter, melted
1 banana, mashed

Heat waffle iron.

Stir together flour, sugar, baking powder, baking soda and salt in mixing bowl. Set aside.

In separate bowl whisk together egg yolk, sour cream, milk, butter and banana. Add liquid mixture to dry ingredients, stirring just until blended. Fold in beaten egg white. Pour batter from cup or ladle onto center of hot waffle iron. Bake about 5 minutes or until steaming stops. Remove waffle carefully.

Makes 4 servings.



the real belgian waffles

Belgian Waffles (Vlaamse Wafels, Gaufres a la Flamande) recipe
1 envelope active dry yeast
2 cups warm milk
2 1/4 cups all-purpose flour
1 egg
3 tablespoons granulated sugar
3 eggs yolks
8 tablespoons butter, melted and cooled to room temperature
1 teaspoon vanilla extract
3 egg whites, beaten to soft peaks

Combine the yeast and 1/4 cup of the warm milk in a small bowl and allow to proof for 5 minutes.

Sift the flour into a large mixing bowl and add the egg, yeast mixture, and sugar. Stir to mix well with a wooden spoon. Add the remaining milk and the egg yolks one at a time, stirring to incorporate. Add the melted butter and vanilla extract, stirring just to combine. Fold the egg whites into the batter, cover with a towel, and allow to rise for 1 hour.

Stir down the batter when ready to cook and cook according to your waffle iron's directions.

Makes about 12 waffles.


Chocolate Waffles with Caramel-Banana Topping recipe
2 servings

Waffles
1 1/2 cups buttermilk baking mix
1 cup granulated sugar
1/3 cup baking cocoa
3/4 cup water
2 tablespoons vegetable oil
2 eggs

Caramel-Banana Topping
1/2 cup packed brown sugar
1/4 cup whipping (heavy) cream
1/4 cup light corn syrup
2 tablespoons butter or margarine
1 teaspoon vanilla extract
3 medium bananas, sliced

Make Caramel-Banana Topping; keep warm. Heat waffle iron; grease if necessary.

Waffles: Stir remaining ingredients until blended. Pour batter for waffle onto center of hot waffle iron. Repeat with remaining batter.

Bake about 5 minutes or until steaming stops. Carefully remove waffle. Serve with topping.

Topping: Mix all ingredients except bananas in 1-quart saucepan. Heat to boiling over medium heat, stirring occasionally; remove from heat. Gently stir in bananas until well coated.


Pumpkin Pecan Waffles recipe
21/2 cups sifted cake flour
4 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon ground nutmeg
2 teaspoons ground cinnamon
3 eggs, separated
1 3/4 cups milk
1/2 cup solid pack pumpkin
1/2 cup butter or margarine, melted
1 cup chopped pecans

Heat waffle iron.

In a large bowl, sift together dry ingredients.

In a medium bowl, beat egg yolks. Add milk, pumpkin, and butter and mix well. Add to dry ingredients, mixing until thoroughly blended. Stir in nuts.

Beat egg whites until stiff peaks form. Fold into batter. Pour 1 cup batter onto hot, lightly oiled waffle iron. Cook 3 to 5 minutes, or until golden brown. Repeat until all batter is used.


Sweet Potato Waffles recipe

Preheat your waffle iron, and sift together the following ingredients:

1 cup sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons light brown sugar
1/4 teaspoon allspice

Add in:

3 beaten eggs
2 tablespoons butter
1 1/2 cups milk
1/2 cup sweet potatoes, cooked and
    mashed, or canned

*Don't over-mix the batter!

Eggnog Waffles recipe
2 cups sifted flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, well beaten
2 cups eggnog
6 tablespoons vegetable oil
1 cup chopped pecans or English walnuts

Sift flour with baking powder, baking soda and salt.

Combine eggs, eggnog and shortening. Add mixture to sifted dry ingredients. Mix until smooth. Fold in nuts. Bake waffles in a preheated waffle iron until steam no longer escapes from the grid.

Yield: 4 servings


Granny Smith Oatmeal Waffles recipe
6 servings

1 1/2 cups all-purpose flour
1 cup rolled oats
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
2 large eggs
1 1/2 cups buttermilk
4 tablespoons vegetable oil
2 tablespoons packed brown sugar or honey
1/2 teaspoon vanilla extract
2 medium Granny Smith apples, grated

Stir together flour, oats, baking powder, cinnamon, baking soda, salt and nutmeg in mixing bowl.

Beat eggs in a separate bowl; stir in buttermilk, oil, brown sugar or honey and vanilla extract.

Add liquid mixture to dry ingredients, stirring just until blended. Fold in the grated apple. Cover and let batter sit for 1 hour before using.

Preheat waffle iron. Pour batter from cup or pitcher onto center of hot waffle iron. Bake about 5 minutes or until steaming stops. Remove waffle carefully.

Great topped with warm cinnamon-scented chunky applesauce and a dollop of creme fraiche.


Heavenly Waffles recipe
2 cups Bisquick
1 egg
1/2 cup oil
1 1/3 cups club soda


Sour Cream Cardamom Waffles recipe
1 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon ground cardamom
Dash of salt
2/3 cup milk
2/3 cup sour cream
1/4 cup butter or margarine, melted
2 eggs, separated

In a bowl, combine flour, sugar, baking powder, cardamom and salt. Combine milk, sour cream, butter and egg yolks; stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer's directions until golden brown (waffles will be soft).

Serve with honey or syrup.

Yields 6 waffles.


Coffee Chocolate Chip Waffles recipe

2 1/4 cups all-purpose flour
1 (1 1/4 ounce) package quick-rising dry yeast
6 tablespoons sugar
1 teaspoon salt
1 cup cold milk
1 cup hot brewed coffee, medium dark roast
    such as Millstone Bed & Breakfast Blend
3 large eggs
4 tablespoons melted butter or vegetable oil
2 teaspoons vanilla extract
1 cup miniature chocolate chips

In large bowl combine flour, yeast, sugar and salt.

In separate bowl, whisk together milk, coffee, eggs, butter and vanilla. Stir into dry ingredient mixture, stirring just enough to blend. Cover with plastic wrap and allow to sit in warm place until doubled in size about 45 minutes.

Fold in chocolate chips.


Virginia Waffles recipe

1 1/2 cups boiling water
1 1/4 tablespoons baking powder
1/2 cup white cornmeal
1 1/2 teaspoons salt
1 1/2 cups milk
Yolks of 2 eggs
3 cups flour
Whites of 2 eggs
3 tablespoons granulated sugar
2 tablespoons melted butter

Cook cornmeal in boiling water twenty minutes; add milk, dry ingredients mixed and sifted, yolks of eggs, well beaten, butter, and whites of eggs beaten stiff. Cook.

Waffles with Warm Raspberry Syrup recipe
3 1/2 cups all-purpose flour
2 teaspoons salt
1/2 cup granulated sugar
2 tablespoons baking powder
8 large eggs, separated
3 cups milk
1 cup butter, melted

Sift flour, salt, sugar and baking powder into a bowl. Make a well in the center of the ingredients.

Whisk together egg yolks, milk and butter in a separate bowl. Pour the wet ingredients into the well of the dry ingredients, stirring until just combined. The batter will be slightly lumpy. Do not over-mix.

Preheat the waffle iron.

Whip egg whites to soft peaks and fold into batter in two additions. Ladle 3/4 cup batter into the waffle iron. Cook waffles until crisp, golden and cooked through, about 3 to 6 minutes per waffle.

Warm Raspberry Syrup

7 cups raspberries, fresh or frozen (thaw slightly)
1 3/4 cups granulated sugar
2 1/4 cups water
1/2 vanilla bean, split or scraped, or 1 teaspoon vanilla extract
3/4 cup lemon juice

Combine the raspberries, sugar and water in a saucepan and bring to a simmer over medium heat. Cook until raspberries are soft, about 15 minutes.

Strain the mixture. Pour the extracted juices into a saucepan; add the vanilla bean, its seeds and the lemon juice. Simmer until reduced by half over medium-low heat, 20 to 25 minutes. Pour over waffles.


Buttermilk-Brown Sugar Waffles recipe

Makes 3 Belgian waffles or 8 regular waffles.

2 eggs
1 3/4 cups buttermilk
1 stick butter, melted and cooled to room temperature
1 3/4 cups all-purpose flour or 1 1/2 cups flour and 1/4 cup wheat germ
2 tablespoons light brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
Nonstick cooking spray or butter

Whisk eggs, buttermilk and melted butter in a large bowl.

In another bowl, stir dry ingredients together, then add to egg mixture and whisk just until smooth.

Heat a waffle iron and butter lightly or spray with nonstick spray (even nonstick waffle irons require this step). Ladle batter onto iron (about 1/4 cup for an 8-inch round iron), close, and cook just until light golden brown. Serve immediately.

wow! thanks lau!  pianowelsh and i will be eating good tommorrow.  (can't believe i forgot the sugar in that recipie.  thanks for reminding me.  a little sugar once in a while is ok).  and the rest of the recipies sound really super good.  i like how you add wheat germ to some.  that's a good idea.  i buy the stuff and then never use it.  i just try to copy my mom's healthful foods - but nobody in the family eats healthy food it seems.  and, whenever i go out of my way to make something fancy - they just want plain.  but i think they'll change their minds about the waffles.  the cardamom ones sound really good.

my point?  well, i think that the british and the americans just can't outdo the french.
In culinary terms - well, almost certainly not...

with valentines coming up - what i want is breakfast in bed.  belgian waffles.  topped with pennsylvania whipped cream (which btw, is the best in the world) and strawberries.
So, if the traditional anonymity of the "Valentine" is to be preserved, how is this person going to provide this repast to you? By post? Just curious...

I appreciate your kind concern but think that you must have misunderstood that bit when I was referring to the potential effects of eating certain somewhat disgusting stuff. But, that said, I do nevertheless have something "incurable", otherwise I'd never have composed anything, would I?!...

Hi, I'd like to thank P..imo for starting this topic and lau for his recipe for authentic belgian waffles.  I bought a set of waffle irons ages ago in a garage sale, thinking they'd be nice to make one day, although I never really got around to it, and I didn't have a decent recipe.  I wanted a yeast base rather than baking powder or self raising flour.  Lau's recipe inspired me, so we had them for desert tonight with ice cream and maple syrup.  Yum.  I might try some of the other variations next time.  Banana sour cream looks appealing now that our 'banana crisis' is over.  Joyce

Unfortunately alistair It isnt that frequent. The supermarket is less than 5 mins walking!

Is there any way of actually making the waffle VERY chocolatey?! Im a serious chocoholic sometimes and I have some friends who really love chocolate too.

that might get messy - but lau might have some suggestions.  who knows.  maybe a bit of cocoa powder or something?  or chocolate sauce on top?  you could make a banana split on top.  belgian waffle, bananas on top with three flavors of icecream and then a generous dallop of whipped cream topped with chocolate sauce and peanuts.  decadent.

i tried the ginger ale waffles and they turned out fast and easy and good. (yes.  sometimes i just post recipies that look good and i haven't tried it).

I've tried cocoa powder in mine... You're going to have to add a lot to get a real chocolate flavor.  I would use chocolate syurp on top, if you like that.  Oh yeah, add some chocolate chips into the batter, that helps too..

Then agian, you could just make brownies!   8)

Keep in mind though, you won't be able to do this with warm waffles... chocolate melts at about 94F, so I would chill them first...

I just had a strange thought...  (what else is new.)

I make some cookies called "marbels."  They are a white sour cream cookie, but at the end, some melted chocolate is mixed in... Would it be possible to lightly drizzle melted milk chocolate into the waffle batter right before you cook it?

maybe if you use enough oil in the waffle iron.  who will try this first?  (kind of reminds me of the angelfood pan that i overfilled and rose and dripped to the bottom of the oven.  i left it there for a week - because i didn't feel like cleaning a whole oven with angelfood batter stuck to it).

Chocolate Fudge Waffles recipe
6 servings

2 ounces unsweetened baking chocolate
4 tablespoons butter
3 eggs
2/3 cup granulated sugar
1 teaspoon vanilla extract
1 cup buttermilk
1 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 pinch salt
3 ounces semisweet chocolate, chopped

Prepare waffle maker according to manufacturer's directions.

Melt unsweetened chocolate and butter together in the microwave on HIGH for 1 minute, stir until smooth; set aside to cool.

In a large bowl, beat eggs, sugar and vanilla extract together until well combined; stir in buttermilk. Add reserved melted chocolate and mix well. Stir in flour, baking soda, baking powder and salt until smooth. Fold in semisweet chocolate and cook in prepared waffle maker.

Serve warm with desired toppings, such as whipped cream, strawberries and fudge sauce.



Death by Chocolate Waffles recipe
1 1/3 cups all-purpose flour
1/3 cup whole wheat flour
1/4 cup unsweetened cocoa
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 cup (1 stick) butter
3 ounces semisweet chocolate
2 tablespoons granulated sugar
2 1/4 cups whole milk
2 eggs, beaten until frothy

Preheat waffle iron.

In a large bowl, sift together flour, whole wheat flour, cocoa, baking powder and cinnamon. In a heavy-bottomed saucepan over very low heat, melt butter, chocolate and sugar. Whisk to smooth, remove from heat, then whisk in milk and eggs.

Make a well in dry ingredients, pour in chocolate mixture and blend just until everything is combined. Let batter stand for several minutes. Pour about 1/2 to 3/4 cup batter into very hot waffle iron and bake until waffles are golden and crisp. Serve hot.

Makes 4 waffles.
