Saint-Saens could play any of Beethoven´s sonatas from memory as well as many other works when was 11.

I wonder what he could do as adult?

The recordings out there aren´t that impressive but he was very old on the other hand

He was involved in many other things then music (he was a universalgenius indeed) so he propaby didn´t practice a fraction of what Liszt did as an adult.
