Performance Practice: different Periods

How do u approach teaching the music of different periods? What do u see as the various issues faced by stds wanting play and perform Bach, Beethoven, Chopin etc? Be as general or specific as u like, this is not asking for an 'exaustive' reply (however exausting it may seem!).
