I'm partial to using song transcriptions as encores as I really love the literature, and they don't get seen much else...
Some of my favorites are:
Grainger/Gershwin transcriptions
Schubert/Liszt Erlkonig (don't do it), Gretchen, Herch herch die larch (one of my favs), Aufenthalt, and fruhlingsglaube
Godowsky/Schubert
Godowsky/Saint Saens The Swan (Not really a "song" transcription)
Also, a couple of Grieg lyric pieces sometimes is nice
Mendelssohn songs w/out words.
Schumann Kinderzenen
Richardson?/Rachmaninoff Vocalise
non-songy stuff:
Casella toccata is cool.
Also, the bowen is rad.

Chopin short etudes "black key" or "butterfly" (I think encores should be short). But if the program has been very virtuosic already, then something calmer would be nice for a change of pace, e.g., Mendelssohn Song Without Words op. 30#3, or Debussy Sarabande from Pour Le Piano, or one of the quieter Scarlatti Sonatas like the D minor L.413. I don't think an encore should try to outshine the main recital: if the piece is that good, and you always want to play it, it should be part of the main program, in case you don't get an encore.

How about something unexpected - Bach's Aria BWV 988 from the Goldberg Variations without repeats?

Gershwin's own transcriptions are pretty good. Why go to Grainger? There are 18 songs published by Warner Brothers. Quite cheap, nice edition.

Maple Leaf Rag (or any of the Jopin rags, really) is another option - it you're playing classical repertoire, it's a nice surprise and lighter way to the end the night.
