Music for transcribing to piano

Music theory and composition are major interests of mine, and I have heard that transcribing music is a good way to improve composition skills, for instance in the way Bach was heavily influenced by Vivaldi after transcribing his concertos for the keyboard.  With this in mind I want to begin transcribing some pieces, but am not exactly sure what would be a good starting point.  I might just dive in and try the first movement of Beethoven's string quartet op.18 no. 4 in C minor.  On second thoughts a shorter movement would probably be better.  Last theory exam I did was Grade 4 AMEB, so have 4-part cadences and vocal writing which I think be really helpful, not that I'm transcribing for vocalists, but because I have some experiences with rules in writing harmony. 

Has anyone else had much experience transcribing?  What music did you find was good?  Any other thoughts?

I think arranging songs for solo piano are great and pretty easy to do.  It doesn' t require anything else, just put the singer's pitch into your part.  The accompaniment can be elaborated on as well as the melody.

Also arranging Schubert's 4-hand to 2 hands are fun and also pretty easy to do.

Thanks faulty.  Things are pretty busy at the moment so I'm gonna postpone it a little,  but those are some fair dinkum suggestions so I'll check em out.
