Classical Piano Arrangement

Hi, I'm a young Music Arranger. I've been arranging music for 2 years. I usually arranged pop,slow rock, classical, and instrumental songs. The thing that I really confused is about arranging classical music. I don't know which part of classical music that must not be changed and vice versa. Is there anybody can help me? I appreciate if you can help me. Thanks
