As well as the Paderewski Introduction and Toccata noted earlier, his "Dans le désert" is also a toccata...very entertaining, too.
I know of two toccatas by Alexander Tcherepnin; I especially like the second of these.
An attractive Toccata ends the 3rd suite by York Bowen.
Joseph Rheinberger wrote a couple of Toccatas which recall those of Bach, in that they consist of several sections in different tempi. So, too, does the Toccata for piano and orchestra by Respighi.
Don't forget the solo Toccata that Saint-Saëns based on the finale of his "Egyptian" Concerto, and the more modest, but entertaining, one in F# minor by the same composer.
