Best Urtext Publisher?

I need to buy books for Chopin Scherzi, Bach Goldberg Variations, and Beethoven Appassionata sonata, but i'm having a hard time picking an edition.
Which edition would be best for each one?  I'm thinking about Henle Verlag or Wiener Urtext, or any other publisher.  I would like the notes to be very legible and clear.
How good are these publishers?

ekier for the chopin scherzi, baerenreiter for the goldbergs, and the henle or wiener for the beethoven works fine, or even konemann budapest (i think)

My recommendations:

Chopin: Jan Ekier (Chopin National Edition), or Paderewski

Beethoven: Peters (Arrau), or Henle

Bach: Neue Bach-Ausgabe (published by Bärenreiter).  The previous scholarly edition (Bach Gesellschaft) is available on IMSLP.  


Henle has very good printing standards and is aesthetically good to look at, but I question some of the behind the scenes "editorial decisions" that go behind such "urtext editions".  They do not notate in detail all the decisions they may in producing their texts.  
Made a Liszt. Need new Handel's for Soler panel & Alkan foil. Will Faure Stein on the way to pick up Mendels' sohn. Josquin get Wolfgangs Schu with Clara. Gone Chopin, I'll be Bach

thanks.  would the barenreiter for the bach goldberg variations be the blue edition?  how large is the print?  would it be better than the wiener urtext edition?

I believe all Barenreiter Bach editions are the blue cover.  They use different colours for different composers.  Older prints may have slightly different covers. 

My experience with Barenreiter's print is very good.  In general they have good sized print, page layout and spacing (they don't cram notes close together).  I've been seeing urtext fingered editions appearing on the bookstore shelves, along side the non-fingered editions (as it appears in NBA).

I haven't examined Wiener Urtext in all that detail, so can't give an opinion as of yet.
