Can someone explain what this symbol means? (see images)

It means play with other hand. The fingering describes the suggestion. Taking notes from one staff and playing with the opposite hand facilitates some passages which may be more difficult to play as written.
Both of your examples suggest you play the notes in brackets with the LH.
