I think that you'll be able to do a lot with one hand....especially with the help of the damper/sustain pedal. Ravel for example wrote a whole piano concerto just for the left hand. I suggest that you start with a piano teacher if possible, and traditional piano lessons in order to develop your technique, sight reading, and understanding of music and the keyboard, and as you progress i'm sure that you'll find out which pieces/music you like best and figure out how to make it work...and sound great.
