Figuring out accompaniment

Hi everyone. I recently found a book of broadway songs (vocal and piano parts) in my house. I don't think that the piano part that they have written in the book is the same as what it would be if I were actually accompanying a singer. It has the melody written into it, which I don't hear too often among accompaniment parts. I listened to one of the songs on youtube, and the accompaniment was definetely not what was written in my book. My question is, How would I be able to figure out the actual accompaniment for the songs in the book that I own? (The chords are included, if that would help at all)

The honest answer is experience. Try it, fiddle around, see what works!
