When you play the Gymnopedie no. 1 introduction, do you use one hand or both hands?
Any other recommendations for this piece?

As for others compositions, HS is better than HT. HS allows you to play exactely how you want to play. Only when one can play RH and LH perfectly and a little faster than the exact speed one may play HT. This is a kind of general rule, except if you are on an advanced level or if you want to exercise sight-reading.

Hello, i have just learnt Gymnopedie No.1 and played it last week at a concert. You play the intro with one hand using the sustain pedal. It helps when the melody comes in as you will have to use one hand anyway. Hope that makes sense.

I play that small introduction with both hands but there's no reason to play it only with left hand (anyway when the melody starts must be played obligatory with the left hand). Choosing one or another is a matter of taste, I suppose.
