Well Bernhard is right, I can actually take on multiple pieces at one go:
Right now learning:
Rach Prelude
Chopin Fan Imp
Chopin Sonata 1
But RE Learning (takes so little time to get back into it to make some grape juice)
Heller's Study
Can't say goodbye to yesterday (Gregson-Williams)
Soon I might add 2 more pieces in about 2 months time

Cool! I think that's a pretty good set! I think it's not a bad idea to learn more than one piece at once, especially pieces less than your current level of playing.
I asked my professor to give me easier pieces this semester so I can work on the pieces he had already assigned me for next semester. He's using it as an opportunity to help build the expressive qualities in my playing. He gave me the two Chopin Op 69 Waltzes. As far as notes, the first was memorized in a day and the second in a few days; I'm still working on the expression though!
I'm also working on Chopin's 2nd Scherzo, Liszt's Orage and touching up spots in all the pieces I play. Last month I also learned Liszt's Sonetto 47 very quickly. (The Liszt pieces haven't been assigned, just on my own decided to.) I usually memorize quickly and then vary practice with the sheet music and sometimes without. I have my computer desk and my piano next to each other so I can take breaks practice a few measures going back and forth for periods of time. If all else fails, you can always do mental practice where ever you may be.
