Which Chopin major work to learn first?

Which of Chopin's major works do you think is best choice for a student to tackle first? Why?

The B minor sonata. Just throw them right into the deep end.
Actually, no, that's a horrible idea, don't do that. Perhaps the Berceuse would be the best to start with. One of the smaller Polonaises. Then maybe the 1st Scherzo. It depends on the student and how far along they are.

If you consider his nocturnes as a major work could it be the e flat major or the b flat minor.

I am assuming you are talking about the Scherzi, Ballades, and Sonatas. I would start with a Scherzo, it is easier than the Ballades and Sonatas.
