Usually simply sight read through the piece and see where it takes me.

I like to get to know the composer also, what the piece was about, what happened in the composers life at the time of composition, maybe simply the title of the piece will inspire some emotion to guide interpretation.

I agree with lostinidlewonder. I will figure out what type of interpretations would be done on this period of music. For instance, if I were playing Beethoven, I would keep the interpretation to a minimum; however if I am playing Debussy, I would interpret it heavily.

What's the difference between a minimum interpretation and a heavy interpretation?

When I play a new piece, I just do my very best to play the piece through with the music!
I don't go heavy on the interpretation for some composers but light on the interpretation for others....
