how should i approach learning the sinfonias? hands separate like the inventions? having 3 voices looks a bit overwhelming

You may find it helpful to copy it out on three separate staffs, one for each voice. Then listen to a recording several times, each time focusing on a single line. Then play the individual lines not worrying about fingering yet, just so you get the shape of the lines in your head. Then do individual lines just to experiment with how you want to do the articulation for the main theme and motifs. Then work on hands separate for the fingering. Then hands separate thinking about the voicing - it's a strange thing but if you play the two voices in one hand with slightly different volumes you will even hear the softer voice more clearly. Then work on hands together for coordination. Once you have the coordination, go back and do some more hands separate to be sure you are distinguishing the voices and using the articulation you want where you have two voices in one hand. Then just keep playing around with it until you are satisfied.
