Is this a good price for a U3 or U1?

I've been quoted $8k including taxes and delivery for a brand new U3 and $7k for a brand new U1. How do those prices sound?

Where are you at? Some Yamaha dealers where I live have said 4.8K for a U1, some where a friend of mine lives (Seattle) said 7.5K. Seems to depend on your market.

I live in Southern California. I'm leaning towards the U3. I had a local dealer quote $9.4k with taxes and delivery, so the $8k sounds pretty good.

Sounds like a decent deal. Also, if you're in South CA, check out Living Pianos (should be near you... check their YT channel perhaps, and you can get in touch with Mr. Estrin), especially if you are able to afford a full size grand. He's a very nice man, spoken to him over the phone a couple of times, though I know nothing of his prices.
