Hello!
Perhaps I can help you. I use a program calling "Capella". With this program you can write piano scores an many other scores (orchestra, chamber...).

Well,

there exist a lot:

- NoteWorthy Composer - for free
- Finale (2005) from Codamusic - very expensive but here you can do
  EVERYTHING - Professional. But you need a binder to read through unti
  you can start
- Capella 
  has a big library you can start form modifing:

  I have used Capella 2003 - not my favourite - especially
  when loading midis - Capella 2005 might be better
- Sibelius (actually 3.0)
   Very intuitive and acceptable price
   Most likely this I would take for making music from scratch

Midinotate and Midicompose

If you just want to put any score into some kind of  piano format
use MIDINOTATE.
If you want to add/remove/cange scores use MIDICOMPOSE.
Those programs have intelligent split hand functionality for piano players
which allow you to split score inot  right hand/lefthand WITHOUT fixed
splitpoint - something I have only seen with those programs ....
