Mastering a piece...

Hi everyone,
Possibly that question has already been asked and answered but I do not find it so...
Apart from merely being able to play it - at least with no flaw - what are the things you must be able to do to be certain that you know a piece (know the chord progression by heart, be able to write the notes from memory, play it HS, play it very quickly/very slowly, etc.) ?
In there any priority order to that list (mandatory to optional) ?
If the answer is already there, feel free to let me know the link !

Deja vu... again and again...
I just asked this about a week ago. I'm fairly certain many people have asked before, but I didn't bother to search yet.
Search words might be: master, finished, done, know

When you are starting out, is it better to play the music, while reading the score, or should you try to memorize the music, so you don't have to use the score? I find myself wanting to look away from the score, when I come to a part that I have memorized. But is this good practice?
