I would rate Ludovico Einaudi's pieces as grade 4-5. Grade 6 has Mozart sonata K545 etc. which are imo definitely harder. If you are roughly at grade 4 or higher, you should probably just dive into whatever pieces you're interested in and try to play them. (If you're grade 8, you should sight read ;D) I've seen a few people successfully teach themselves Nuvole Bianche around 6 months after starting to learn the piano. It's not hard -- you should just be familiar with playing a melody along with standard accompaniments (arpeggios, slow stride patterns)...
