You could always go with the age-old "one you like the most". Seriously, why should you care about difficulty?
I also vote for Un sospiro because Liszt was just so brilliant when he dreamed it up. It fits the hands so comfortably. This was my first Liszt piece I ever touched. good luck with whatever you do.donjuan

I am thinking of being brave and attempting to learn a Liszt Etude but I'm not sure which is best to learn first, as they all seem extremely hard. Which of Liszt's etudes would you say is the 'easiest' to start off with (even though none of them are what one would call 'easy') ?

One of the hardest, but definitly not THE hardest. I would say Feux-follet is THE hardest etude by liszt. I think everyone agree on this one
I am curretnly working on Chopin Scherzo no.2, Ballade no.3 and Etudes no.4 & 5, Schubert Impromptu d.899 no.2, Haydn Sonata no.59 in Eb. The only Liszt I have really done is Liebestraum no.3.
