when do you consider a piece is learned well enough to move on?

If you're talking strictly in the sense of learning the notes, dynamics, etc. as written:
1) When I've reached point where it cannot teach me anything technically. (this is assuming I can play the whole piece technically correct)
For some pieces this is pretty quick.

If you're talking about interpretation:
1) When I've reached a point where I have nothing to add to the interpretation.
2) When I've reached a point where the music has nothing left to tell me.
For some pieces, I'll never move on.  They will always be new and exciting.
