Erm.... you want to learn a Haydn symphony?  For piano?  Are you sure you don't mean sonata rather than symphony?  I can't imagine the Haydn symphonies are well represented in piano transcriptions, after all.

I'm not a Haydn fan at all (although I love his trumpet concerti), but I have a special place in my heart for his sonata No.50 Hob.XVI:37 in D major.

XVI:52 in E flat is challenging, and fun if you can get the last movement going.

I just did XVI:50 in C, which is very cheerful and bright.

I'm currently playing around with XVI:34 in E minor; I quite like it, might learn it properly.

But heaps of them are really nice - Haydn is underrated, in my opinion.

52 is his hardest, and 50 in C major has a tough first movement.  if you wanted something a bit easier, you can try 49 also in E flat, which is not as hard as his last sonata and it is quite nice.

#47 in b minor, which is probably my favorite classical Sonanta by anyone!  ;D

Haydn wrote great sonatas for any skill level. You could almost pick one out completely at random and enjoy it.

Right now I'm working on XVI:30 in A. Varied themes in the exposition, the development makes some incredibly catchy bits of these, then interestingly ends in an Adagio. Second movement is a set of variations (haven't gotten there yet).

If you've got a thing for minor keys, I like XVI:34 in Em. Very addictive presto.
