on the graded pieces spreadsheet what does the U stand for in the grade column?

Well, I would agree that it is either ungraded or undecided.   Similar to a movie being NR (not-rated).

I don't have the spreadsheet in front of me but I'm pretty sure it stood for undgraded.  This could mean one of two things, either I could never find a grade for it when it was mentioned, or it was considered beyond a level where grades "mattered" i.e. it was advanced repetoire.

**edit**  I just found the spreadsheet on the forum and gave it a quick look.  The U is for ungraded/unknown.  Hope that helps.
