Organs sounding a bit out of tune

Is it me or is this some sonic effect?

Hm, I don't know much about this, but I have played a digital organ with something called 'intonation' available.  It's like, when you first depress the keys, it is slightly flat, and gets to the actual pitch after a fraction of a second, and goes slightly flat when you lift it again.  I've played a real organ that has this, but if you don't depress the key all the way, it changes the
pithc, and I messed around with it for a while.  I don't know exactly what causes it.

Are you talking about something different?

That's it. When a tone just begins to sound/blow it starts out a little flat. I guess the pressure needs to build up or something.

I hate it, really. Can't they get around it?

Check the key signature.

It is my unscientific observation (I don't play organ or know anything about it) that the same organ sounds very good in one key and out of tune in another.  This is based on playing brass music in church and trying to tune to the organ.  Generally it will work better with sharps than flats or vice versa.
