I am wondering how important taking and passing exams are.

Do colleges in Europe want you to have passed all of them?

In my experience, they ask for a grade or the equivalent of. If you have to audition you can just play something to the level that they are expecting. I suppose all colleges and universities have different prerequisites. Most have websites, you can take a look at them and find out what you need to know.
