Do you think it's important to keep a large portion of your repertoire under your fingers, or is it ok to sort of forget it and just pull it back up when you need it?  If so, what's the best way to work old rep practicing into your regular practicing?

Once you've learned something, you can relearn it with relative ease. I think it's ok to just move on with new repertoire and bring back the old repertoire when you need it.

agreed.

Right now I'm not doing much performing, so I only really have my last two pieces ready at any given time.

Greetings.

It depends. I would of course play the technical pieces such as the Mozart's variations once learned. True that you can easily relearn the pieces with a relatively easy material, but those that have a specified technique will take more time. Hope this helps. :)

Chang's book has a fair bit on this topic IIRC.

I am trying to keep more in my repertoire. I keep getting asked to play something and I just can't because nothing has been kept up. I think it is pretty important.

Yes it is important. Harder pieces involve technique that is aquired in the easier pieces. Keeping up the technique is very important.
