depends on the mood, and how energetic.  i wish i could play chopin etudes like some people, but i'm sightreading thru all the preludes (instead of the etudes like lostinidlewonder suggested).  it has been fun and not as difficult (yet challenging) as i thought.  i think i excel in beethoven and mozart - but i don't confine myself to a list really.  today i printed out a slew of irish music that noone has probably heard of.  i'm going to arrange it and surprise people with something different next year on st. patrick's day.

I have recently fallen in love, even more deeply than I had when I first heard it performed, with Chopin's Raindrop prelude through playing it. It might be one of the most famous and most played preludes, but that doesn't distract from it's beauty IMO.
For nocturnes, that famous one in Eb major is a beaut, but I haven't heard many others.

My favourite Beethoven sonata would have to be between Moonlight and Pathetique, it depends on what kind of mood I'm in. Again, two of the most popular pieces in the world to play, but still they hold their beauty.

Bach Prelude + Fugue? - d major (because i can play it)
Chopin Prelude? - raindrop
Chopin Nocturne? - havent really played many, probably Eb major one, the famous one
Chopin Dance? never played / heard any
Beethoven Sonata? appassionata i think
Haydn Sonata? dont really know any
Mozart Sonata?one in d major dunno the number
Tchaikovsky Dance from the Nutcracker? chinese dance because i played in the orchestra on the flute :)

Chopin-Prelude op.28 no.8 in f sharp minor
Chopin-Nocturne op.27 no.2 in D flat major
Chopin-Dance-a lot of mazurkas, polonaises (op.53 especially)
Beethoven-Sonata in E flat major op.31 no.3
Haydn-Sonata no.52 in E flat major
Mozart-Sonata in D major KV.284
Tchaikovsky-Valse de fleurs

I would go for the Chopin waltzes.  Is that what you meant by Chopin dance?

Polonaises are also dances, I believe.
