guacamole recipie

guacamole recipie:
1/2 c low fat yogurt
2 jalapenos, seeded and minced
(or habaneros - depending on who's eating)
2 plum tomatos
1 white onion chopped
2 tbs minced cilantro
1/2 tsp salt
1/2 c nonfat sour cream
2 avacados
2 tbs fresh lime juice
serve with tortilla chips.

I ususually only use an advocado, sour creamn and a spice mix. I tried using tomato and onion but that didn't give a lot of improvement. Of course I always cook for one person so that is also a bit problematic.

so give us your recipies for guacamole. maybe more cilantro makes it even better?
suppose a fast way to make it all. one avocado, some salsa, sour cream, cilantro, lime juice. voila. i've never actually measured the ingredients.

dip, is Tomato Ketchup and Mayonnaise. Try it! Tis hard to get a good mix between the two though...
Can always be fancied up with some 'erbs and spices, and various other things; but as a base it's great!

I use one advocado, one can(?) of sour cream, actually a little less, and then I add a guacamole sause spice mix.
But I don't use guacamole as a dip. I use it in nacho's only. Together with quorn fungus (instead of miced meat), beans, corn, peas and what else is in a can of mexican vegetables. And then a lot of cheese. And of course the tortillas.
I must say that I do not know what habaneros, jalapenos and cilantros are.

habaneros are the hottest of the hot peppers. jalapenos come next.
cilantro is an herb and you can buy it fresh in the produce section. if you chop it fresh, it tastes really good (just make sure you slide your fingers up the stem and pull off the leaves. not using the entire stalk).

I couldn't really say what the porportions are (just do it to taste) but I just love guacomole so I had to add my recipe. The trick is not letting everything else overpower the avocado flavour, but having all of the flavors be held together by the avocado. Also, I prefer to have some delicious avocado chunks still (vs whipping the snot out of the fruit).
my recipe :
Avacodo
sour cream
tomato
onion
jalapeno (leave seeds in for spicier flavor)
fresh, minced garlic
cilantro
fresh lime juice
salt
pepper
chili powder
cumin
and now a bonus, mango salsa :
Mangoes/and or pineapple/ and or peach/ and or strawberries
purple onion
fresh, minced garlic
red bell pepper and/or green, yellow, orange
jalapeno (leave seeds in for spicier flavor)
cliantro
fresh lime juice
salt and pepper
Goes perfectly with grilled salmon or chicken fajitas.
Grilled Salmon :
Salmon steaks or fillets
olive oil
fresh, minced garlic
rosemary
salt and pepper

Also, I am thinking that salsa would be excellent when served with cajun oysters... mmmmmmmmm... haven't tried it yet, but soon I will
.
Cajun oysters :
flour
cajun seasoning
oysters
oil
heat oil in pan
mix together flour and cajun seasoning in container that has a lid
put oysters in container with seasoning, close lid and shake until covered
cook seasoned oysters in hot oil until golden brown and crispy on the outsides. Serve with lemon wedges and mango salsa and/or tartar sauce.

cajun oysters? haven't heard of that one. gulp. i think i'll pass.
we just had a block party in my neighborhood. after all the kids took turns in the bouncy - the adults got in. wish i'd stayed to watch. apparrently some guy really got off on it and wouldn't come out. (i thought the kids had a problem with the five minute time limit).
we had a firetruck here too.
but, oh, i forgot - the food was really really good. especially liked the garbanzo bean salad (with corn, cilantro, onions, tomatoes, and some kind of really good dressing).
if we didn't have these block parties once a year - we'd forget each other's names again. we all put on name tags and reintroduce ourselves.

just waiting for you to throw up. of course, if you only eat one or two - you're fine. five or six and i'd be a 'fear factor' participant. do you ever watch their stomachs? right before their going to let it all out - there's this snake like rhythm that gets going up and down - and you'd have to use a plunger to keep it from coming out. of course, that's not oysters. oysters would be tame to creepy crawlers made into a thick milkshake.
my nightmare would be eating anything but fish from the ocean. can't tell you why. probably because i never ate shellfish (crabs oysters, etc) and just dont' like the taste. taste is everything to me. i don't care about consistency. if a piece of wood tasted good - i'd eat it. of course, some pizza tastes like wood - but has the consistency of an oyster...but that doesn't count.

Amazing recipes! Must try them.
But I must say I'm a no frills gal at heart (or a very lazy cook). Avocado, extra virgin olive oil and maldon sea salt do the trick for me as far as guacamole is concerned. And nothing beats a fresh rock oyster with a squeeze of lemon juice.
