HELP with "Setting Up" Electronic Keyboard, Laptop, Notation Software (Printer)

We're "starting over" from bad advice/products given us some years ago regarding a set up for making composing "storage" easy.
We are searching for advice on best (but afforadable: less than $1,000??!) electronic keyboard that makes possible composing for multiple instruments or voices (orchestra) music; then "gets it into" a relatively new Laptop; then "transforms" all this dense music info onto a printout. We have a great printer.
Optimally, we'd also like a local "tech/guru" to literally assist us in setting everything up (probably the easy part) and then SHOW "how it's done". We're in Phoenix AZ
However, ANY recommendations will be appreciated re keyboard (make, model) and notation software (Sibelius, Finale, Cakewalk, Noteworthy, etc.).
