Anyone ever heard of Chicken Markino??  It's on the cafeteria menu for today.

How was it? When I first saw this I googled it and it took me to your cafeteria menu; tonight it also took me to a blog; sounds like it was chicken with cheese and olives; I make something similar, so now I'm curious!  ;D

Ha.  It was probably named for one of the "chefs" or something who came up with a "great new recipe."  I'm sure yours is better.  Something about cooking for 3 or 4 thousand people makes even good recipes not so great.

Anyway, for cafeteria food, it wasn't too bad.  It was a chicken breast (or chicken slab, whatever) with chopped onions, tomatos, and black olives and then covered in cheese.  I had a cold and a fever, and couldn't really distinguish whether it was mozarella cheese or swiss cheese.

What did the blog say about it?  Probably another student.

I remember dorm food; "Bloody Elephant Scabs" (Chicken Parmigiana), "Baked Fish Alkaline (almondine)" and the omnipresent "Mystery Meat". I worked on a cruise ship in Asia and whatever it was was always grey; we'd ask the cooks "what is that" and they would always say "meat". Never knew what kind....  :o  it was pretty good, whatever it was.  ???

Sounds like "chicken and leftovers" which means it was probably swiss cheese. Here's mine, it's a bit more complex and quite tasty...  https://www.scdrecipe.com/recipes/r_011_00069.php
