Katsaris vs Scherbakov Beethoven-Liszt?

Whose set is better, both in terms of playing and sound quality?

I don't like either too much.  I highly recommend Villa's 5th symphony, which is out of this world. 

Between the two, I'd go for Katsaris.
For us musicians, the music of Beethoven is the pillar of fire and cloud of mist which guided the Israelites through the desert.  (Roughly quoted, Franz Liszt.)
