One of Chabrier's 'Pièces Pittoresques'? There are 10 of them, varying in style, length and difficulty - the one thing they share is a beguiling tunefulness that makes them all suitable for encore duty.

I second Chabrier - - - take a look at Habanera or his Bourree (I'm sure you can find people playing these pieces on YouTube).

Not knowing what level you are at, I'll just throw out a bunch....

Daquin, Le Coucou
Rameau, Rappel des Oiseaux
Massenet, Toccata (Little known but charming, also not too difficult.)
Poulenc, Presto or Toccata
Sancan, Toccata (A little longer than the other and a bit more difficult.)
Debussy, Prelude from Pour le Piano

A professor of mine used to use Debussy's "Passepied" from Suite Bergamasque as an occasional encore.  Audiences were charmed beyond belief.

I third the motion on Chabrier, as well.
Current repertoire:  "Come to Jesus" (in whole-notes)

The Toccata from Debussy's suite 'Pour le Piano' would be a very good encore-but it would have to be a very good performance.

Perhaps a piece from Boulez's 1945 set of piano miniatures Notations? The second one is marked trés vif and would certainly make an impression on the audience. :)

+1 on the Chabrier, but I'd prefer Bouree fantasque, for the sheer showmanship of the repeat-notes.

Coincidentally, I am working on a French encore too.  I picked Ibert "Les bavardes" (or Chatterbox in some English translations), the last work of the set "Encounters".  A lot of Poulenc make good encores, like some of the nocturnes or improvisations.  I might want to shy away from the Debussy/Ravel as they don't always sound encore-ish since they are too standard.  There is a little ultra-romantic work of Chaminade, the Elevation, Op. 76/2 that might work as an encore.

Lastly, would you consider Clement Doucet as a French composer?  If yes, then by all means, flaunt the Chopinata or Isoldina for a good laugh!!!

Women and the Chopin Competition: Breaking Barriers in Classical Music

The piano, a sleek monument of polished wood and ivory keys, holds a curious, often paradoxical, position in music history, especially for women. While offering a crucial outlet for female expression in societies where opportunities were often limited, it also became a stage for complex gender dynamics, sometimes subtle, sometimes stark. From drawing-room whispers in the 19th century to the thunderous applause of today’s concert halls, the story of women and the piano is a narrative woven with threads of remarkable progress and stubbornly persistent challenges.
